Let’s make Charsi Chicken Karahi

Chicken
I used skinless, bone-in chicken for this recipe. Cut the chicken into 18 pieces, for karahi and remove the skin, leave the bone in because juices from the bone will give this dish richness and flavor.

Spices
Two essential ingredients are black pepper and salt. None of the other spices are used in this recipe but to give the spiciness I used green chilies.

Tomatoes
I used four large tomatoes to make the gravy. Cut the tomatoes in half and add to the chicken, once the tomatoes are soft remove the skin and break them down with the back of the spoon to make the gravy.

Oil
This recipe uses a lot of oil. Any neutral oil can be used for this recipe. I used a total of 1 cup of oil, fry the chicken and take out any extra oil before adding chilies.

Equipment

  • 1 Karahi or wok

Ingredients
  

  • 2 lbs chicken 1 whole chicken, cut into 16 pieces.
  • 1 cup oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4-5 large tomatoes cut into halves.

Garnish

  • 1 inch ginger thinly sliced
  • 2-3 green chilies

Instructions
 

Fry the chicken

  • Heat oil in a Karahi.
  • Add chicken and cook it until it’s light golden brown.
  • At this point, you can remove most of the oil and leave as much as you like.

Make masala

  • Cut tomatoes into halves and add to the chicken.
  • Add green chilies and salt. Mix and cover it.
  • Cook on medium-low heat until tomatoes are softened. It will take about 10 minutes.
  • Remove the skin from tomatoes and break them down with a wooden spoon to make gravy.
  • Once the oil separates from the masala, add freshly ground black pepper.
  • Garnish with sliced ginger and green chilies.

Notes

After frying the chicken remove any access oil and then add rest of the spices.
Green chilies are optional, you can add more or don’t add at all.
