Chicken Quesadilla

When I’m hungry but don’t want to eat boring food. I make these chicken quesadillas that are so quick and easy to put together as no marination is required. Crispy crunching exterior and cheesy chicken filling are just so satisfying and fulfilling that you don’t need anything else after that. Follow along so I can show you how to make this recipe in a desi style.

Ingredients for chicken quesadilla

Chicken
I used boneless skinless chicken breast cut into 1-inch cubes. Chicken thighs are another alternative that makes very juicy filling. I mixed the chicken with yogurt, and all of the spice then I cooked it right away. Boneless chicken takes hardly any time to cook. I cooked it on high heat for 10-12 minutes.

Spices
I used salt, red chili, cumin, and coriander powder for marination. These are my go-to spices for most of my recipe. You can always adjust the spices according to your taste and make it mild or spicy but this spice mix was perfect for my taste buds.

Yogurt
I have used 2 tbsp of yogurt which will enhance the flavor and make the chicken super soft.

Ginger garlic paste
Use either freshly made or frozen ginger-garlic paste, as using pre-crushed store-bought ginger and garlic is not advisable. You can also use store-bought desi-style ginger and garlic paste.

Cheese
I used shredded colby jack and mozrella cheese but you can use any cheese of your choice. Freshly grated mozzarella will give the best results and gives you that satisfying cheese pull.

How to serve chicken quesadilla

Chicken quesadillas are best enjoyed when served warm right off the stove. The perfectly spiced chicken, creamy cheese, and quick preparation make this recipe ideal for dinner or a quick lunch. While I like to serve chicken quesadillas with sour cream and diced jalapenos, they are delicious on their own.

Ingredients
  

Ingredients to make Quesadillas

  • 4 flour tortillas
  • 2 cups mozzarella cheese
  • 1 small onion sliced optional

Instructions
 

Cook chicken

  • Mix all of the ingredients for chicken in a bowl and mix it with the chicken.
  • Now add 1 tbsp of oil in a pan and cook the chicken for 10-15 minutes over high heat. Let it cool down.

Make Quesadillas

  • Now add a layer of cheese on one-half of the tortillas, followed by chicken, onions, and more cheese. Add any other toppings you like.
  • Fold over the tortilla and then cook on a skillet over medium-low heat until the cheese melts and tortilla makes a light golden crispy crust.
  • Cut into slices and serve right away.
