Easy Rasmalai made with Ricotta cheese

- 16 oz ricotta cheese
- 1/4 cup sugar
- 1/4 tsp cardamom powder
- 12 oz evaporated milk 1 can
- 7 oz condensed milk 1/2 can
- 1/2 cup whole milk
- Pistachios for garnish

Prepare Malai
Preheat your oven to 350F.
In a bowl, add ricotta cheese, sugar, and cardamom powder. Mix it well.
Add a spoonful of ricotta mixture to a cupcake pan and bake for 35-40 minutes. It will make 8-9 ras malai.Check it with a toothpick, when the toothpick comes out clean it means they are ready.
Prepare Milk Mixture
While Malai are baking prepare milk mixture. In a pan, mix evaporated milk, 1/2 can of condensed milk, and 1/2 cup of regular milk. Cook it until it comes to a boil. Leave it aside to cool down.
Once malai are baked, let them cool down for 10 minutes before taking them out of the pan.
Layer malai in a serving tray and add milk mixture. Cool down for 8 hours before serving.
Garnish with chopped pistachios and enjoy.
- To check if the malais are baked and ready to be taken out of the oven, insert a toothpick in the center; if it comes out clean, it means the malais are ready.
