Easy Rasmalai made with Ricotta cheese

I crafted an easy Rasmalai using Ricotta cheese as a quick alternative in this simple recipe. Instead of boiling, I chose to bake the ricotta cheese and then soak it in a delightful milk mixture. This approach streamlines the process while still delivering the delicious essence of traditional Rasmalai.

  • 16 oz ricotta cheese
  • 1/4 cup sugar
  • 1/4 tsp cardamom powder
  • 12 oz evaporated milk 1 can
  • 7 oz condensed milk 1/2 can
  • 1/2 cup whole milk
  • Pistachios for garnish

Instructions

Prepare Malai

  • Preheat your oven to 350F.
  • In a bowl, add ricotta cheese, sugar, and cardamom powder. Mix it well.
  • Add a spoonful of ricotta mixture to a cupcake pan and bake for 35-40 minutes. It will make 8-9 ras malai.
    Check it with a toothpick, when the toothpick comes out clean it means they are ready.

Prepare Milk Mixture

  • While Malai are baking prepare milk mixture. In a pan, mix evaporated milk, 1/2 can of condensed milk, and 1/2 cup of regular milk. Cook it until it comes to a boil. Leave it aside to cool down.
  • Once malai are baked, let them cool down for 10 minutes before taking them out of the pan.
  • Layer malai in a serving tray and add milk mixture. Cool down for 8 hours before serving.
  • Garnish with chopped pistachios and enjoy.

  1. To check if the malais are baked and ready to be taken out of the oven, insert a toothpick in the center; if it comes out clean, it means the malais are ready.
