Garlic and Jalapeño Steak Bites

- 8 oz rib-eye steaks
- 1 tsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 small potatoes cut into cubes
- 1 jalapeño pepper
- 1/4 tsp salt for potatoes
- 1/4 tsp black pepper for potatoes
- 4 tbsp butter
- 5 cloves garlic minced
- 1 tbsp fresh thyme or 1 tsp dried

Wash and cut potatoes into 1/2 inch long and 1/4 inch thick cubes.
Cut rib-eye steak into bite-size pieces, season it with salt and pepper. Heat a cast iron skillet, add a tsp of oil to it. Once hot, add the steak bites. Let the steak bites cook on one side for 1.5 minutes before moving them around. Cook a total of 4-5 minutes over high heat, but not more than that.
Then take it out, cover, and set it aside.
Add potatoes to the same pan and cook over medium heat until tender and crispy on the outside. Season it with salt and pepper. It will take anywhere from 7-8 minutes.
Now add 1/2 a stick of butter and freshly peeled and minced garlic. Cook over high heat for 30 seconds.
Add one sliced jalapeño and steak bites.
Quickly mix it and turn off the stove.
Serve right away.
You can leave the potatoes and only make the steak bites.
You can also serve it with other roasted veggies, such as brocolli and peppers or make mashed potatoes.
