Cut the mangoes and take all of the pulp out. You do not have to have the perfect chunks.
Add these mango chunks to a blender along with 1 can of evaporated milk, 1 can of condensed milk, and cream cheese. Put the lid on and blend it well until it becomes velvety.
In your serving tray, add about 1/2 a cup of the mango mixture and spread it evenly. Add a layer of Maria cookies, then a layer of the mango mixture, and again Maria cookies.
Keep repeating this step until you are done using the mango mixture. The top layer is going to be the mango mixture.
Cover the mango carlota with plastic wrap and let it rest in the refrigerator for 4-6 hours or overnight, allowing the layers to meld together beautifully.
If you like to garnish, then add some more mango chunks or whipping cream.
Cut into slices and serve
