Chicken
I used boneless, skinless chicken thighs cut into strips. Marinated the pieces with simple spices and cooked them on high heat before adding any vegetables.
Bell Peppers and Onions
A crucial ingredient for chicken fajitas filling is the bell pepper and onions. I used red, yellow, and green bell peppers, but it’s really up to you; feel free to use one color or a mix of different colors. You’ll also need 1 small onion, cut into strips, just like the bell peppers.
Spices
Marination is super simple; you’ll need salt, chili powder, paprika, cumin powder, black pepper powder, dried oregano, onion powder, and garlic powder.
You can also use readymade fajita seasoning as well.
Slider Buns
Use good-quality slider buns. I like to use Savory Kings Hawaiian, but you can also use sweet or any other brand of your choice. Cut the sliders in half with the help of a serrated knife. Add the fajita mixture, add lots of mozzarella cheese, and top it with the other half. Apply a generous amount of garlic butter before baking.
Garlic Butter
Melt the butter in a bowl, add in minced garlic, and chopped parsley or cilantro. Mix it well and apply on the buns before baking.
Cheese
I used freshly grated mozzarella cheese. Freshly grated cheese melts better than pre-shredded cheese. Feel free to use any cheese of your choice.
Pro Tip: To grate mozzarella cheese, I used a blender; that’s why it looked crumbly.
Baking Time
I baked my sliders at 350°F for about 15 minutes. I was watching it closely to avoid burning; it depends on the type of cheese you’ll use to see how long it’ll take to melt it.

How to Store Leftover Sliders
You can store any leftovers in a refrigerator in an airtight container for up to 3-4 days. I don’t recommend freezing the sliders. You can marinate the chicken, cut veggies, and freeze them. Once ready to serve, defrost, cook, and assemble.

Ingredients
- 1.2 lbs chicken Boneless
- 12 slider buns 1 pack
- 1 bell pepper or a mix of different colors
- 1 small onion
- 1 cup Mozzarella cheese or any other cheese of your choice
Spices
- 1 tsp salt
- 1 tsp paprika
- 2 tsp cumin powder
- 1 tsp red chili powder or cayenne pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- 2 tbsp oil
For garlic butter
- 2 tbsp butter melted
- 1 tsp minced garlic
- Finely chopped cilantro or parsley
Instructions
- Cut your chicken into small strips and marinate it with spices and oil.
- Thinly sliced bell pepper and onion.
- In a cast iron skillet, start cooking chicken. Once almost cooked, move the chicken to one side of the pan and add sliced onions and bell peppers.
- Cook for 2 minutes and mix it.
- Preheat your oven to 350°F
- Cut the sliders in half with the help of a serrated knife.
- On the bottom half of the slider buns, add a layer of cooked chicken, add cheese, and cover with the top half.
- In a bowl, mix minced garlic and finely chopped parsley with melted butter.
- Brush buns with garlic butter.
- Bake at 350°F preheated oven until cheese melts. About 10-15 minutes.
- Serve right away
