I absolutely adore spicy food, and I’ve recently stumbled upon the incredible combination of chipotle chili in adobo sauce paired with cream cheese—it’s simply irresistible! This delightful mixture can enhance various dishes, from pasta to sandwiches, or even be used as a rich sauce to drizzle over fries. The Chipotle Chicken Pasta Recipe is versatile, allowing you to tailor it to your preferences; feel free to add extra veggies or omit them entirely. Step one: grab all of your ingredients because once you start cooking, you need to move fast.
Marinate the chicken
In a bowl, mix all of the spices mentioned in the recipe, then cut your chicken into bite-sized pieces and marinate it with half of the spice mix. Save the other half of the spices for the next step. Set aside the chicken.
Start Boiling your Pasta
In a large pot, add water, add 1 tbsp of salt. Once it starts boiling, add pasta. Cook according to the package directions until al dente. Meanwhile, start cooking your chicken.
Cook your chicken
On another stove, in a pan, add some oil and start cooking the chicken over high heat. It will take 7-8 minutes. I like to cook it from one side before mixing it around. Once the chicken is done, take it out and in the same pan, add butter, shallots or thinly sliced onion, and garlic. Cook for 2 minutes, then add the rest of the spices, corn, spinach, cream cheese, heavy cream, and shredded cheese. Mix it well.
Add chipotle Peppers
At this point, you can decide how spicy you would like your pasta to be; add anywhere from 1 to 4 crushed chipotle chilies. Mix it and toss in the chicken.
Your pasta should be ready at this point. Drain it and add it to the chicken. Mix it well, add some Parmesan cheese and lime wedges, and enjoy.

Chipotle Chicken Pasta Recipe
Ingredients
- 1 lbs chicken boneless
Spices
- 1/2 tsp salt or to taste
- 1/2 tsp chili powder
- 1/2 tsp cumin powder
- 1/2 tsp oregano
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Ingredient for the sauce
- 1 tbsp olive oil
- 1 tbsp butter
- 1 shallot thinly chopped
- 2 cloves garlic minced
- 1 cup corn or peas
- 5 oz baby spinach
- 2 cups heavy cream
- 1-3 Chipotle peppers in adobo sauce
- 2 oz cream cheese
- 1 cup cheddar cheese
- 16 oz pasta 1 package
- Lime wedges and cilantro to serve
Instructions
- In a bowl, mix all the spices and set them aside.
- Cut chicken into bite-sized pieces and marinate with 1 tbsp of oil and half of the spice mix made earlier. Save the other half for later
- Start boiling water for pasta and add 1 tbsp of salt to it. Once it comes to a boil, add pasta and cook until al dente, and drain.
- Meanwhile, heat a pan and cook chicken over high heat. Don't overcrowd the pan and don't move it around for 1-2 minutes. After that, change the side and cook the other side for 1-2 minutes to have a nice char on it. I cooked a total of 8 minutes.
- Remove the Chicken and in the same pan add butter, shallot, and minced garlic. Cook for a minute and add rest of the spice mix, heavy cream, corn, and spinach. Cook for another 2 minutes.
- Add 1 chopped chipotle pepper for mild. If you like hot, then you can add more according to your spice level.
- Now add cream cheese, heavy cream, cooked chicken, and pasta.
- Mix it well and taste test for salt. Add some Parmesan cheese, and serve with lime wedges.
