Easy soft chicken bread with spicy filling is warming, fulfilling, and a popular appetizer in many South Asian households. In the month of Ramadan, all of us try to make a variety of dishes to feed young and adults to satisfy all of the Ramadan cravings. This chicken bread is super delicious and very versatile. You can add any filling to it. I made it with spicy chicken and cheese filling but feel free to modify it according to your liking and taste preference.

Dough
I used homemade dough which is very easy to make. To make the dough you need all-purpose flour, yeast, salt, oil, eggs, and water to knead the dough. I prefer to make a big batch and freeze the dough so whenever I need it I just take it out and thaw it overnight before using it. You can also use ready-made pizza dough if you want.

To make the dough add yeast, sugar, all-purpose flour, salt, eggs, and oil in a bowl, and then slowly add lukewarm water to knead the dough. I used a stand mixer but I also knead it by hand often.

Ingredients for chicken filling

Chicken
I used 1 lb of boiled chicken, cut into small chunks. You can also use rotisserie chicken and shred it to have one less step or use leftover chicken from your curries.

Spices
For spices, I used salt, onion powder, garlic powder, oregano, and black pepper powder. Feel free to add or omit what you like or dislike.

Mayonnaise and Sriracha
For the filling, I also used a good dollop of mayonnaise and sriracha. A combination of both will give you the most flavorful and creamy texture that is perfect for the filling.

Fresh Ingredients
I have added chopped green onion for a pop of freshness, you can also use regular onion and even jalapenos.

How to bake chicken bread

Baking time depends upon the size and the shape of the chicken bread, I like to shape it into a fish or sometimes I like to bake it into smaller finger foods. Check all of my photo ideas on how you can shape it. Bake 375°F until nice and golden.

How to store Chicken Bread

I like to freeze my chicken bread in advance as it makes a perfect appetizer for guests and a lunch item. put your filled chicken bread on a lined tray and freeze them. Once frozen transfer into a plastic bag. You can keep them in the freezer for up to three months and defrost them before baking.

Ingredients

Ingredients for chicken filling

  • 1 lb chicken breast boiled
  • 1/2 cup green onion
  • 1/2 cup mayonnaise
  • 1/2 tsp salt add more after tasting
  • 1.5 cups shredded mozzarella cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp sirracha optional
  • 1 tsp oregano or Italian seasoning
  • 1 tsp paprika

Ingredients for dough

  • 3 1/2 cups flour
  • About 1/2 to 3/4 cup warm water
  • 2+1 eggs 1 egg for egg wash
  • 4 tbsp olive oil or butter
  • 1 tsp salt
  • 1 tbsp sugar
  • 2.5 tsp yeast

Instructions

Make Dough

  • In a mixing bowl, add flour, yeast, salt, sugar, 2eggs, and butter or olive oil. Now slowly add warm water to make a soft dough.
  • You can use a mixer or knead it with your hands.
  • With the help of a brush, cover the dough with a thin layer of oil and then cover it with a paper towel. Keep it in a warm place to rise. I turn on my oven for 5 minutes and then turn it off before leaving the dough to rise.

Make chicken filling

  • To make the filling, boil the chicken until it’s tender. Now shred the chicken and mix it with salt, black pepper, paprika, onion powder, garlic powder, oregano, mayonnaise, cheese, chili flakes, and diced spring onions.
  • You can use a stand mixer with whisk attachment or use a hand mixer. If you are using an electric whisk you don’t need to shred the chicken in the beginning.

Shape the bread

  • Preheat the oven to 375°F. Once the dough is ready, divide it into 14-16 sections depending on the size of the tray. Roll the dough in a rectangle, making slits on half of the dough but not to the end. Check the video for instructions. Now add a tbsp of the filling on one side. Roll it to give the shape of a roll. Make sure to tuck in the ends. now tightly pack these in a try.
  • To shape it like a fish, divide the dough into three sections and roll a rectangle shape. Now add prepared filling and cheese in the center. With the help of scissors or a pizza cutter make slits on both sides, then bring the dough to the opposite sides to make a zigzag pattern.

Bake the bread

  • In a bowl whisk one egg and brush it on the bread. Once the oven is preheated to 375°F bake the bread for 30-40 minutes or until it gets the beautiful golden brown color on top.
  • Melt 2 tbsp of butter and apply to the bread. Cover with a towel or serve right away.
