Rasmalai is a famous South Asian dessert, usually made with fresh cheese and milk. Sweet and soft malai is served cold in a milk mixture. It’s a little tricky to make these, but with this easy version, we are going to use ricotta cheese and bake it instead of boiling it and then soaking it in the milk mixture. Let me take you along as I make this Easy Rasmalai made with Ricotta Cheese.

Ingredients for Easy Rasmalai made with Ricotta Cheese
Ricotta cheese
Ricotta translates to recooked in Italian, and ricotta is what’s called a “whey cheese.” It is traditionally made from the whey leftover during the production of other cheeses. I used 16 oz of ricotta cheese, added 1/4 cup of sugar and cardamom powder. Mixed it well and baked it for 30 minutes or until a toothpick comes out clean.
Sugar
I used 1/4 cup of sugar in the first step. You just need regular sugar for the ricotta mixture, in addition to the condensed milk we are using later.
Cardamom Powder
I used 1/4 teaspoon of cardamom powder in this recipe. I like the taste and smell, but if you don’t like it, then you can skip it altogether.
Milk Mixture
For the milk mixture, I have used evaporated, condensed, and regular milk. Ras or the milk mixture is so easy to make. Just combine all types of milk and cook it until it comes to a boil, and the milk mixture is ready.

How to serve Rasmalai?
To serve rasmalai, I like to arrange the rasmalai on individual plates or in a bowl. Then, I pour over a generous serving of milk mixture to ensure the malai are soaking in it. Garnish with chopped nuts like pistachios or almonds for added texture and flavor. Rasmalai tastes best when served cold.
How to store Rasmalai?
You can store leftover Rasmalai in an airtight container for up to five days. Chilling the dessert in the refrigerator overnight or for at least 8 hours enhances its taste. This dessert is my favourite as I can prepare it in advance, making it perfect for gatherings and special occasions.

Easy Rasmalai made with Ricotta cheese

- 16 oz ricotta cheese
- 1/4 cup sugar
- 1/4 tsp cardamom powder
- 12 oz evaporated milk 1 can
- 7 oz condensed milk 1/2 can
- 1/2 cup whole milk
- Pistachios for garnish
Instructions
Prepare Malai
- Preheat your oven to 350F.
- In a bowl, add ricotta cheese, sugar, and cardamom powder. Mix it well.
- Add a spoonful of ricotta mixture to a cupcake pan and bake for 35-40 minutes. It will make 8-9 ras malai.Check it with a toothpick, when the toothpick comes out clean it means they are ready.
Prepare Milk Mixture
- While Malai are baking prepare milk mixture. In a pan, mix evaporated milk, 1/2 can of condensed milk, and 1/2 cup of regular milk. Cook it until it comes to a boil. Leave it aside to cool down.
- Once malai are baked, let them cool down for 10 minutes before taking them out of the pan.
- Layer malai in a serving tray and add milk mixture. Cool down for 8 hours before serving.
- Garnish with chopped pistachios and enjoy.
