Mango Carlota (No Bake Dessert)

Mango Carlota is a Mexican-inspired no-bake, easy 5-ingredient dessert. You barely need 30 minutes to make this recipe; then leave it in the refrigerator for 4 to 6 hours or overnight and enjoy. This is a great recipe to make in advance, especially if you are hosting.

Let’s Make Mango Carlota Mexican Style

Mangoes

First of all, you need two large, very ripe, sweet mangoes. I had 1.5 lbs of mangoes. Then I cut the mangoes and took all of the pulp out. You do not have to have the perfect chunks as they will be ground. Alternatively, you can also peel them first, then cut them into chunks and discard the seeds. I was left with 1 lb of mango chunks.

Blender

Now add these mango chunks to a blender.

Evaporated milk

Add 1 can of evaporated milk as well.

Condensed milk

Now go ahead and add 1 can of condensed milk.

Cream cheese

You’ll also need 1 (8 oz) of cream cheese. Add the cream cheese to the blender. Put the lid on and blend it really well until it becomes slightly frothy.

Maria Cookies

Traditionally, Carlota is made with Maria cookies, but you can also use other digestive biscuits as well.

Assembling the Mango Carlota

Keep repeating this step until you are done using the mango mixture. The top layer is going to be the mango mixture.

Chilling and serving Mango Carlota

Cover the carlota with plastic wrap and let it rest in the refrigerator for 4-6 hours or overnight, allowing the layers to meld together beautifully. As the dessert cools and settles, the cookies will soak in all the flavors and become soft, absorbing the refreshing essence of the mango, which will literally melt in your mouth. This patience will reward you with a delightful texture and harmony of flavors, making each bite a creamy, fruity indulgence that is perfect for warm days or special occasions.

Storing Mango Carlota

Instructions
 

  • Cut the mangoes and take all of the pulp out. You do not have to have the perfect chunks.
  • Add these mango chunks to a blender along with 1 can of evaporated milk, 1 can of condensed milk, and cream cheese. Put the lid on and blend it well until it becomes velvety.
  • In your serving tray, add about 1/2 a cup of the mango mixture and spread it evenly. Add a layer of Maria cookies, then a layer of the mango mixture, and again Maria cookies.
  • Keep repeating this step until you are done using the mango mixture. The top layer is going to be the mango mixture.
  • Cover the mango carlota with plastic wrap and let it rest in the refrigerator for 4-6 hours or overnight, allowing the layers to meld together beautifully.
  • If you like to garnish, then add some more mango chunks or whipping cream.
  • Cut into slices and serve
