Puri ka Halwa

Ingredients for Puri ka Halwa

Semolina
Semolina or Soji is the main ingredient of this recipe and can be easily found in any grocery store, I didn’t roast semolina to give it any brown color we usually do in a regular sooji ka halwa.

Sugar
Puri ka halwa is sweeter compared to the regular dessert. For every half a cup of semolina, I used three fourth cups of sugar. Regular sugar is what I used, but you can also use sweeteners if you prefer.

Water
Halwa is slightly thinner in texture, the water-to-semolina ratio is one and a half cups of water for every half a cup of semolina. Water is not directly added to semolina, but a simple syrup is made by combining sugar, water, and food coloring. To make the simple syrup, mix everything and cook on high heat until the sugar dissolves.

Food Color
I used 1/4 tsp of yellow food color while making simple syrup. I won’t recommend any other colors other than yellow or orange.

Cardamoms
Green cardamoms are my favorite to add to any dessert. If you don’t like them then you can omit using cardamom.

Almonds and Pistacios
I like to garnish halwa with sliced almonds and pistachios, but they are optional. Use any other toppings of your choice such as coconut, raisins, and cashews.

Ingredients

Ingredients for Simple Syrup

  • 3/4 cup sugar
  • 1.5 cups water
  • 1/4 tsp orange or yellow food color

Garnish

  • a few pistachios and almonds

Instructions

Make Simple Syrup

  • Add all the ingredients for the sugar syrup in a pot and cook until the sugar dissolves. It'll take about 5 minutes, then leave it on the side.

Make Halwa

  • In another pot, add ghee or oil and cardamom. Stir for 1 minute.
  • Add semolina and cook for 2-3 minutes. We are not going to brown the semolina.
  • Add simple syrup and cook on medium heat, stirring constantly until the bubbles start forming about two minutes.
  • Take it off the stove immediately, cover and leave it for about 5 minutes. In the beginning, it will have lots of water but trust me with this step.
  • After 5 minutes, garnish with almonds and pistachios.
