Ingredients for chicken curry
Chicken
I used boneless skinless chicken breast cut into 2-inch cubes. Usually, I prefer chicken thighs for boneless curries as they are packed with flavors or a mix of both thighs and chicken breast. Using boneless chicken is one of my tricks to make it in under 30 minutes.
Spices
For this simple recipe, you don’t need any special spices other than what you already have in your pantry. I prepared this delightful curry using a combination of readily available spices: salt, red chili, turmeric, and cumin-coriander powder. These common spices not only livened up the flavor of the dish but also highlighted the convenience of using pantry staples.
Yogurt
Marinate the chicken with yogurt, I used regular yogurt in this recipe which will give it a little tanginess. Try to use yogurt that is not overly sour or else sourness from the yogurt will overpower the taste.
Tomato sauce or tomato puree
I used tomato sauce but you can also use tomato puree for this recipe. The key is to keep a balanced amount here or else it will turn the chicken curry overly sour.
Fried onions
I used 1 cup of store-bought onions but If you would like you can also make it at home. Peel and slice onion then fry it until lightly golden. Do not over-fry as it will keep cooking even when taken out of the oil.
How long is the marination time
For this curry, I only marinated the chicken for 5 minutes, if you have time then marinate it for 30 minutes or overnight but cooking it right away is also completely fine.
How to serve chicken curry
This chicken dish is a triumph of flavor and comfort. The rich, savory gravy infuses the tender chicken, creating a dish that is perfect for serving over a bed of fluffy white steamed rice or accompanied by warm, fluffy naan. To add a refreshing element to the meal add a side salad. Together, these elements create a complete and delicious meal that is sure to satisfy and delight anyone who has the pleasure of indulging in it.
How to store any leftover
It’s important to store leftover chicken properly to maintain its quality and safety. By placing it in an airtight glass container, you can help preserve its flavor and prevent it from absorbing odors from other foods in the refrigerator. I like to keep any leftover chicken in the refrigerator in an airtight glass container. You can make a small portion for easy reheating and store it in a freezer. Microwave it before serving and enjoy.
