Chicken
When it comes to preparing chicken, the possibilities are vast. You prefer succulent chicken breasts. Perhaps savory thighs are more to your taste. Each type brings its distinct texture. They each add flavors that can enhance any meal. For this recipe, I used 1 lb of chicken breast. If you yearn for the robust taste of chicken thighs, don’t hesitate to swap or even blend both cuts. This creates a delightful medley of flavors.

Spices
Rashmi chicken gravy is made with simple spices. These include salt, black pepper, and white pepper. It also includes dry roasted cumin-coriander powder. I like to dry roast my cumin and coriander seeds because dry roasting helps with the aroma and flavors. Add cumin and coriander seeds in a pan without any oil. Start roasting until the color changes a little bit. Take them off of the stove. Roughly crush them to make a coarse powder.

Cheese
This was my very first time cooking with cheese in any desi dish. I must say it was creamy. It was delicious and very flavorful. I had some fresh mozzarella on hand to use but regular mozzarella cheese will be good for this recipe.

Heavy cream
Heavy cream is another essential ingredient which gives this recipe a richness and creaminess. Add the cream at the very end right before taking it off of the stove.

Ginger garlic paste
Use either freshly made or frozen ginger-garlic paste. It is not advisable to use pre-crushed store-bought ginger and garlic. Enhance the flavor with the addition of half a bunch of cilantro for a touch of freshness.

Ingredients
  

  • 1 lb boneless chicken chicken breast or thighs
  • 2 tbsp butter
  • 1 tbsp oil
  • 1.5 tsp ginger garlic paste

Spices

  • 1/2 tsp salt or to taste cheese is salty so always start with less salt and add more if needed
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 2 tsp dry roasted cumin-coriander powder

Other ingredients

  • 1/4 yogurt
  • 1/4 cup heavy whipping cream
  • 1/4 cup mozzarella cheese shredded
  • Green chilies for garnish

Instructions
 

  • Cut chicken into cubes.
  • Add oil and butter to a pan.
  • Once the butter starts melting, add chicken and cook for 4-5 minutes on high heat.
  • Add ginger garlic paste and all the spices. Cook for another 4-5 minutes on high heat or until all of the water dries out.
  • Add yogurt and cheese. Mix it and then add heavy cream. Mix and give it another 1-2 minutes.
  • Garnish with green chilies and enjoy.

  1. Don’t overcook the chicken especially if you are using chicken breasts. I like to cook on high heat with butter to get the juicy curry. 
  2. I had fresh Mozzarella on hand and decided to use it. Regular mozzarella works perfectly.
