I selectively incorporate this spice blend into recipes like korma and minced beef, where it not only enhances the taste but also eliminates any unwanted meaty odors. In this special spice blend, and I have included all the ingredients, that give flavor and fragrance. Remember, I don’t use this spice mix for everything but in some recipes. I have another recipe for regular garam masla, which I will share soon.
whole spices such as black pepper, cloves, cinnamon, cumin seeds, coriander seeds, nutmeg, mace, star anise, green and black cardamom are used in this spice blend. I took a small quantity of each spice, dry roasted, and then grind them to make a fine powder.

I think investing in a good spice grinder is a good idea especially if you like to cook and use homemade masalas very often, but a regular smoothie maker works fine.
How to store garam masala?
I keep this spice blend in an air-tight container for up to 6 months, but I don’t use it often. So, I always prefer making a small quantity.

What is the substitute for garam masala?
Garam masala is a unique blend of spices that gives a very strong yet delicious taste and aroma to countless cuisines especially South East Asian food. If garam masala is not available you can use all spice mix or curry powder, even though the spices are not exactly the same yet it will give you somewhat of the similar flavors.

Garam Masala
Equipment
- 1 coffee grinder or regular grinder
Ingredients
- 1 tbsp coriander seeds
- 1 tbsp cumin seeds
- 1 tsp black peppers
- 1 tsp cloves
- 1/2 nutmeg
- 1 stick mace
- 5-6 green cardamom
- 2 black cardamom
- 2 inch stick of cinnamon
- 1 star anise
Instructions
- Add all of the ingredients to a pan, and dry roast for 4-5 minutes on medium heat.
- Once fragrant, let them cool down, and then make a powder by using a coffee grinder
- Store in an air-tight container.
