Ingredients for tandoori lamb chops
Chops
For this recipe, I used lamb chops however you can also use mutton/goat. Ask your butcher to cut the chops into individual pieces (french style).
Spices
The tandoori lamb chops have been marinated with a blend of traditional spices including salt, red chili, cumin-coriander powder, and authentic tandoori masala. It is essential to use a combination of tandoori masala and other spices for the desired taste, rather than relying solely on store-bought tandoori masala. This careful selection of spices enhances the flavor of the dish, creating a truly delightful culinary experience.
Ginger garlic paste
Lamb has a unique taste and smell, and ginger garlic paste help remove the smell in addition to adding to the flavor. I used 1 tbsp each of homemade ginger and garlic paste for marination.
Yogurt
Yogurt performs a dual role: providing both flavor and acting as a binding agent for the spices. I employed a measure of half a cup of full-fat yogurt for this purpose. If desired, one may opt for either low-fat or Greek yogurt as a suitable alternative.
Lemon Juice
Lemon juice is an excellent complement to lamb, as it functions as a natural tenderizer, breaking down protein fibers. Additionally, lemon juice effectively eliminates grease from meat, resulting in a refreshing and clean taste that enhances the overall flavor profile. Lime juice can also be utilized as an alternative to lemon for equally pleasing results.
Papaya or tenderizer
For grilled tandoori lamb chops, I added one tbsp of raw papaya paste or use 1 tsp of tenderizer. It’ll help in faster cooking of chops. If you don’t like very tender chops like me, do not add any tenderizer or papaya paste.
Grilling the Lamb Chops
Grilling the lamb chops gives them a smokey flavor and charred crust which is impossible to resist. I strongly recommend grilling lamb chops at 350°F for 8-9 minutes per side. Do not overheat the grill and also apply some oil on the grill before grilling the chops which will help prevent any stickiness.

Tandoori Lamb Chops
Equipment
- grill or cast iron skillet
Ingredients
- 2 lbs Lamb chops
- 1 tsp Salt
- 1 tsp Red chili powder
- 1 tsp Black pepper powder
- 1/2 tsp Turmeric
- 1 tsp Paprika
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 2 tbsp Tandoori masala
- 2 tbsp Lemon juice
- 1/2 cup Yogurt
- 1/4 cup Oil
- 1 tbsp Ginger paste
- 1 tbsp Garlic paste
- 1 tbsp Papaya paste or tenderizer
Instructions
- Wash and pat dry lamb chops.
- Mix all the ingredients and marinate the chops overnight or for at least 30 minutes.
- Take out the chops from the freezer at least 30 minutes before cooking.
- Heat your grill at 350°F, and grill for 8-9 minutes per side.
- Serve with green chutney.
