Finely chop your onion, tomato, green chilies, and cilantro.
Add eggs, diced vegetables, milk, salt, and red chili powder to a bowl. Whisk everything together.
Cook your parathas or roti and set them aside.
Heat a pan. Add butter to the pan, then add half of the egg mixture. Cook it on medium heat for about 2 minutes.
Once the omelette is cooked on one side or starts leaving the sides of the pan, take your cooked paratha and put it on top of the omelette.
Now take a plate that can fit in the pan, cover the pan with it, and flip your omelette. Make sure to wear kitchen mitts to avoid burning.
Slide the omelette back in the pan, add 2 slices of cheese, fold over the paratha, and cook for about 1 minute or until the cheese is melted.
Repeat with the remaining half and 2nd paratha.
