Dhoodh Pati Chai

Out of all the things in life that are comforting chai holds a special place. Whether it’s a rainy afternoon, a chilly morning, or just a moment of peace in a busy day, chai makes everything feel a little better. Chai is a cultural tradition, a blend of cardmom, sugar and milk which makes it a drink loved by young and old.

Our morning starts with a cup of chai, its a must have ater a hefty lunch or a dinner. Guests can’t leave the house without a cup of chai. There are many variation I’m going to show you how to make dhoodh pati karak chai which is famous in my household.

Dhoodh Pati chai is a  drink made with milk, tea leaves and milk.

What goes into Dhoodh Pati chai

Black tea

To make Dhoodh Pati Chai, a good quality black loose leaf tea is a must. I get mine from a desi store. Don’t buy the one from regular stores; they don’t give you the right color and taste.

Milk

I use regular whole milk to make my chai; some people use evaporated milk or 2% milk as well. You can use any milk of your choice, but to make Dhoodh Pati, you need whole milk like I do.

Water to milk ratio

For my Dhoodh Pati Chai, the ratio of water to milk is 1:3. For every 1/2 cup of water, I use 3/4 cup of milk. Some people like to do half milk and half water, while others use only a small amount of milk. It’s again your personal preference.

Sweetener

I like to add honey to my chai, but sugar or any other sweetener will work just fine.

Cardamom

Cardamom is optional, but adding cardamom will give it a sweet taste and a unique aroma that is hard to resist.

For how long to cook chai?

Cooking the chai at two steps is crucial, first one when you add tea leaves in it. Make sure to cook it for 3-4 minutes once it’s comes to boil before adding milk. Once chai comes to a boil, lower the heat and cook on low heat for 4-5 minutes. If you are making in larger quantities then cooking it for 8 or 10 minutes is a must.

How to serve Dhoodh Pati chai?

Serving chai with cookies or tea biscuits is another cultural tradition that has been cherished for generations. Dipping the cookie or rusk into the steaming cup not only enhances the flavors but also creates a delightful experience for the senses. Dhoodh Pati Chai

Ingredients
 
 

  • 1/2 cup Water
  • 1 tsp Loose-leaf black or black tea sachet 2
  • 3/4 cup Milk
  • 1 green cardamom

Instructions
 

  • Add 1/2 cup of water to a pan. Once it comes to a boil, add tea leaves and let them simmer in the water for about 2-3 minutes.
  • Now add 3/4 cup of whole milk and let it come to a boil. Be careful because there’s a good chance you are going to spill it all over your stove.
  • Lower the heat and cook it for at least 3-4 minutes.
  • Strain the chai using a sieve or chai strainer. Add a sweetener of your choice and enjoy.

Notes

If your chai is about to boil, turn off the stove and also remove the pan from the stove to avoid spilling.
You can turn the burner on and then let it simmer for about 3-4 minutes before serving. 
For larger quantities, the simmering time will be more
