What goes into Mutton Rogan Josh

Mutton

Obviously, the most important part of Rogan Josh is mutton. I recommend using bone in pieces of dasti or shoulder. This part of mutton is tender, which will soak up all the spices, and you’ll get the most flavorful Rogan Josh. I used goat meat for this recipe, but you can also use lamb.

Mustard oil

Traditionally, mutton Rogan Josh is made in mustard oil, which is what I used in this recipe. If you don’t have mustard oil, then use vegetable or avocado oil.

Spices

This Rogan Josh recipe uses two spices that you usually don’t find in a lot of other recipes. First one is fennel seeds, and the second one is Hing ( ginger powder)

Other than those spices, I also used salt, Kashmiri chili, turmeric, cumin, and coriander powder.

Yogurt

This recipe doesn’t require any tomatoes or onions. The sourness and the gravy are mostly made with yogurt. Some recipes out there use ginger and garlic, while others don’t. I, however, prefer using ginger and garlic paste as it helps to get rid of the mutton’s smell.

How to serve mutton rogan Josh

I like to serve it with homemade naan, roti, and Plain white rice. Add a side salad, and it makes a perfect meal. If you have any leftovers, you can put them in a container and leave them in the refrigerator for up to 5 days.

  • In a pan, add oil. Let it warm up a little, then add cinnamon, fennel seeds, and ginger powder (hing). Mix it around and give it a minute.
  • Now add mutton pieces, ginger garlic paste, and cook on high heat until mutton changes color. It will take 4-5 minutes.
  • Now add salt, turmeric, cumin, coriander powder, and Kashmiri red chili powder. Mix it well, cand ook on high heat for 3-4 minutes.

Stove top method

  • If you choose to cook on the stove top, then add 2 cups of water and cook until mutton is tender. It will take anywhere from 30 to 45 minutes. Replenish water if needed.

Instant pot method

  • You can also transfer the meat to an Instant Pot with 1/2 cup of water and pressure cook for 25 minutes. Release the pressure and continue with the next step
  • Once mutton is tender, add the yogurt and mix it. Cover and cook for five minutes over medium heat. Turn off the stove and let it sit covered for another 5 minutes, this will bring out all the oil and the beautiful deep red color.

If you like spicier food, then add 1 tsp of cayenne pepper along with kashmiri chili powder.
